Timbers Restaurant Invites the Public to Sample Winter Menu on December 8th


Warren, VT (December 4, 2014) – This Monday, December 8th, Timbers Restaurant at Sugarbush Resort will host its annual Taste of Timbers, where guests are invited to sample items from the new winter menu created by head chef Todd Dibkey and general manager Bruce Hyde.

Chef Dibkey arrived at the resort in the fall of 2013 and began introducing international flavors into the menu. His culinary tastes are influenced by time he spent in Hawaii, Alaska, Italy, and Asia.

Bruce Hyde took over as the manager of Timbers this spring and has been working with Dibkey on a gradual transformation of the restaurant. Hyde, raised in the Mad River Valley, came to Sugarbush after managing his family business, The Hyde Away. Under Hyde’s leadership, The Hyde Away earned the Seven Days award “Best Things to Happen in Vermont Food” in 2013. He has been working to expand local food sourcing on the Timbers menu, as well as to enhance the wine list.

Taste of Timbers runs from 5:00 PM to 7:00 PM and is open to the public. The Timbers staff will offer complimentary samples off the new winter menu, and a cash bar will be open for the evening.

The new winter menu features offerings influenced by Dibkey’s international experience and Hyde’s focus on local ingredients. The Winter Vegetable & Coconut Stew is a traditional Buddhist dish, originating in Vietnam, but incorporating local vegetables. Pappardelle al Venison boasts flavors from Italy while using Hollandeer Farm venison. Other featured items include Maple Roasted Salmon and Pork Belly Tacos. This dynamic new menu combines global flavors with local and fresh ingredients.
